End of Summer - Southwestern Corn Chowder
/While still trying to hold on to summer, as I wrote in my last post, the weather is starting to call for comfort food. The temperatures are dipping fast, my maple tree is turning gorgeous red and my back yard is strewn with fallen leaves and acorns....
So, time for soup... I looked at my loot from the farmers' market and aha! Corn chowder! First I made my corn-vegetable stock using the onions, celery, carrots, garlic, corn and herbs I got from the market. Then I roasted under the broiler my poblano and jalapeno peppers. First step done. (I like my soup spicy, but you can always leave the jalapenos out - the poblanos provide plenty flavor!)
Once the stock was strained and cooled and the peppers peeled and chopped - time to put the soup together! This flavorful soup is dairy free and can be made vegan, if you choose not to include the sausage. It's plenty hearty without it!
