Fridge:
1 lb. ground beef, or lamb
Produce:
2 medium eggplants
1 large onion, minced
2 teaspoons minced garlic
4 large tomatoes, diced
2 large English cucumbers, diced
4 medium scallions, sliced thin
6 medium radishes, diced
1/2 cup fresh mint, minced
1/2 cup Italian parsley, minced
1/2 cup fresh lemon juice
1/4 cup lime juice
Pantry:
1 cup olive oil
1/4 cup pine nuts
1 tablespoon Za'atar
1-2 teaspoons sumac
1 cup raw sesame paste
Israeli pickles
Salt and pepper
Optional: s’chug, pickled hot peppers, harissa, etc.
